In honor of ANZAC Day on April 25th, we made classic ANZAC Biscuits. ANZAC is an acronym for the Australian and New Zealand Army Corps.
These cookies are an interesting combination of oats, coconut, butter, flour, sugar and Golden Syrup (cane sugar syrup). I only keep unsweetened coconut in the house, so I used that, and upped the sugar by a bit. They weren’t overly sweet, but we really enjoyed these.
