Cake Slice Bakers: Shannon Bennett’s Lamingtons

So this was my first month with the group, and it’s been a busy one with a lot of changes happening!

Anyways, I chose to make Shannon Bennett’s Lamingtons (even though I pretty much despise petit four type cakes, and this very much qualified!). The fact that I had everything in the house to make these won out after some debate for the month’s choices.

I made these little Australian cakes pretty much exact to the recipe.ย  They consist of a sponge cake filled with whipped cream and raspberry jam, dipped in a chocolate glaze with coconut flakes covering them. Yum!IMG_1971a

  3. So glad that you are baking with the Cake Slice Bakers. What an entry into the group – beautiful lamingtons. As an Aussie, I’ve certainly had my fair share of lamingtons over the years, and although they are messy to make, they are so worth it.
