So this was my first month with the group, and it’s been a busy one with a lot of changes happening!
Anyways, I chose to make Shannon Bennett’s Lamingtons (even though I pretty much despise petit four type cakes, and this very much qualified!). The fact that I had everything in the house to make these won out after some debate for the month’s choices.
I made these little Australian cakes pretty much exact to the recipe. They consist of a sponge cake filled with whipped cream and raspberry jam, dipped in a chocolate glaze with coconut flakes covering them. Yum!
Thanks for a great month with the Cake Slice Bakers! Already looking forward to May’s cake.
