Cake Slice Bakers: Shannon Bennett’s Lamingtons

So this was my first month with the group, and it’s been a busy one with a lot of changes happening!

Anyways, I chose to make Shannon Bennett’s Lamingtons (even though I pretty much despise petit four type cakes, and this very much qualified!). The fact that I had everything in the house to make these won out after some debate for the month’s choices.

I made these little Australian cakes pretty much exact to the recipe.  They consist of a sponge cake filled with whipped cream and raspberry jam, dipped in a chocolate glaze with coconut flakes covering them. Yum!IMG_1971a

  3. So glad that you are baking with the Cake Slice Bakers. What an entry into the group – beautiful lamingtons. As an Aussie, I’ve certainly had my fair share of lamingtons over the years, and although they are messy to make, they are so worth it.


  4. These sound heavenly, I love that chocolate and coconut combination. My friend used to make these oat balls with cocoa and coconut, and these remind me a bit of those. The jam and the whipped cream inside sound like a sweet surprise.
