We’ve lived in the state of Michigan for the majority of my life- and all of my life has been in the midwest. As a result, most people I know have never heard of Hummingbird cake. I discovered I liked it YEARS ago, having a slice as dessert while traveling.
I made cupcakes to take to a family dinner, and as always- these were a big hit. I upped the baking temperature to 350, and had no problem with it.
The only difference between this recipe and the one I usually use is that this used pureed pineapple- I always use crushed.
And- sorry- I didn’t use his cream cheese frosting. I used my own.
