I’m going to be honest- I thought we had marshmallow fluff and I thought we had condensed milk. Turns out I was wrong on both accounts but I did have plenty of fresh cranberries! So the filling is a thick cream cheese icing.
These are pretty much heaven- pumpkin spice, cranberry and cream cheese- who wouldn’t like these?? They’ll also probably feature as breakfast tomorrow in this house- we like eating cake for breakfast, and a cookie that’s like a cake? Bingo!
The picture was taken prior to them being chilled-at all, and they were also still slightly warm since my fiancee didn’t want to wait.

I was planning on making these with cream cheese filling too – I don’t want to buy marshmallow fluff just for this recipe. Pumpkin and cream cheese is a great combo!
