Cookies for breakfast! Crazy, I know.. but actually, muffins, scones, cinnamon rolls are all baked goods and really don’t vary that much from cake and cookies. Around here, any leftover baked good is typically a good option for breakfast!
This cookie has another story though. I come from a very Italian family, and we’re just a tad protective of our family recipes. This one comes from a book published by our family a long time ago- and many of the contributors have passed away. This book is a wonderful legacy in our family and heavily relied on to “pass the recipes on” to the next generations.
Lemon Ricotta pancakes were always a special treat for breakfast- sometimes out in a restaurant, once in a while at home. These cookies funnel that flavor profile (and if you haven’t had ricotta pancakes, ooooh are you missing out!, and make a great, slightly sweet breakfast cookie.
They may not look like much, but don’t let that deceive you! These are fluffy cookies that are moist with a hint of lemon. And always a huge hit anytime I take them anywhere!
Lemon Ricotta Cookies
From the kitchen of Rose LaMacchia
2 Sticks of Butter
1 Cup of Sugar
8 oz. Ricotta Cheese
1/2 Tsp Lemon Extract
1/2 Tsp Vanilla Extract
1/2 Tsp Salt
2 Cups of Flour
1/2 Tsp Baking Soda
Cream butter, sugar, and eggs until fluffy. Add ricotta, vanilla and mix well. Add all dry ingredients and mix until combined. Drop by teaspoons onto cookie sheet. Bake at 350 degrees Fahrenheit 10-15 minutes until bottoms are brown.
Optional: Ice with a mixture of confectioners sugar, milk, and flavoring.
